In an era were dining spaces often lean heavily on trends and Instagram worthy decors, PARVA in Chennai arrives in style. This neat little restaurant with 40 seat capacity is tucked away in Akkarai on ECR. The newly opened restaurant feels less like a concept-driven launch and more like a heartfelt tribute to India's kitchens.
The idea here is simple, food that comforts, flavours that stay authentic to their roots, and a dining experience that encourages you to sit down and savour each bite.

As soon as you enter, you can sense the mood and vibe of the place. Each seating comes with Kalamkari-inspired details that sit alongside rustic lighting, stained glass accents, and earthy textures, creating an atmosphere that feels warm without trying too hard. It is intimate enough for a quiet weekday lunch and lively enough for a family dinner that stretches late into the evening.

What truly sets PARVA stand apart, however, is its food narrative. Chef Arupam Baidya and his team bring together flavours from over 23 regions across the country, but without turning the menu into an overwhelming culinary map. Instead, each dish feels intentional and deeply connected to its place of origin.

The meal began with a comforting Masoor Dal, coriander, and Gondhoraj lemon soup from the kitchens of Bengal. The soup is light, fragrant, and layered with the unmistakable citrus aroma that instantly transports you eastward. Do try out the small slice of the Gondhoraj lemon and the chef challenges you to eat it with the rind and yup, it is worth the try. The Palak Patta Chaat from Uttar Pradesh followed soon after and was easily one of the most enjoyable starters on the table. Crisp spinach leaves topped with vibrant chutneys and yoghurt made it indulgent enough for adults and playful enough to make kids forget they were eating greens.

Seafood lovers should not miss the fiery Prawn Ghee Roast inspired by the coastal kitchens of Kundapur. It is rich in spices and roasted beautifully in ghee, it carried the kind of heat that builds slowly and keeps you going back for another bite. Equally memorable was the Mutton Chapli Kebab, it is rustic, boldly spiced minced patties that felt hearty and deeply satisfying.

For the mains, we continued our gastronomical journey across India with dishes that each carried their own distinct personality. The Thecha Paneer brought Maharashtra's love for green chilli heat onto the plate without overpowering the softness of the paneer. The Potli Egg Curry stood out not just for presentation but for flavour too. A boiled egg wrapped inside an omelette and simmered in a rich curry, what a combo! It paired beautifully with rice and breads, and I still can feel the curry's flavour as I recall and write about it.

But it was the Chicken Dak Bungalow that became the soul of our meal. Chef Arupam's narration of the dish's colonial-era Anglo-Bengali roots made it even more memorable. Originally cooked in roadside dak bungalows by caretakers using whatever ingredients they had on hand, the curry remains beautifully uncomplicated even today. Mildly spiced with potatoes, eggs, and chicken simmered in a comforting gravy, it felt like a dish that is all about our history and culture back then. Paired with ghee masala rice, jeera rice, or the restaurant's excellent poori basket featuring variants like luchi, bedmi, kochuri, and radha ballavi, it becomes a meal worth lingering over.

And just when you think the journey is complete, dessert arrives. The baked rosogolla offers Bengal's beloved sweet a caramelised finish while retaining the softness and familiarity that makes the dessert a best seller at PARVA.

What elevates PARVA beyond just another regional restaurant is the sincerity behind it. Chef Arupam and his team personally engage with diners, sharing stories, ingredients, and the cultural context behind dishes. For anyone who enjoys food as much for its history and geography as its flavours, PARVA feels more like travelling through India's length and breadth relishing its flavours.
