With nearly two decades of experience in hospitality and international cuisine, Pandey’s rise from the kitchens of New Delhi to one of the world’s most prestigious dining destinations reflects a journey built on discipline, innovation, and culinary excellence.
Born on 2 February 1987 in India, Pandey completed his education at the University of Delhi before pursuing professional culinary training at the Institute of Hotel Management (IHM) Pusa, New Delhi. His early years in hospitality began with Crowne Plaza Gurugram in 2008, where he trained extensively in Indian and continental cuisine.
Over the years, he worked with globally recognized hospitality brands including Hilton Hotels, ITC Hotels, Marriott International, Hyatt Hotels, The Leela, and Radisson Blu. His career took him across India and international markets such as Afghanistan, Dubai, Singapore, Thailand, and the United States, exposing him to diverse culinary systems and luxury dining operations.
Pandey became widely recognized during his tenure at Hilton Jaipur, where he won the prestigious F&B Masters competition at the India level and later represented the country in Thailand, securing third place in the Asia region finals. Under his culinary leadership, the restaurant “Chaandi” also received acclaim through the Times Food Award for Best Rajasthani Restaurant.
His experience further expanded when he served as Head Chef for Indian Cuisine with NATLASS FZC supporting US Army operations in Kandahar Airfield and Dubai. Working in demanding operational conditions, he managed large-scale catering systems while maintaining international food safety standards and culinary consistency.
Throughout his professional journey, Pandey has catered to several high-profile personalities, including Prime Minister Narendra Modi, actor Salman Khan, former Indian cricket captain Kapil Dev, celebrity chef Ranveer Brar, comedian Zakir Khan, singer Kailash Kher, music composer Pritam, and wrestler The Great Khali.
In 2020, while working with Marriott International at Sheraton Grand Palace Indore, Pandey received the “Unsung Hero of the Year” recognition for his dedication during the pandemic period. He later joined Hyatt Regency Gurugram as Chef de Cuisine, where he managed specialty dining concepts and luxury banquet operations.
His transition to the United States in 2022 marked a new chapter in his career. As Executive Chef at RAA NYC LLC in New York City, he introduced refined chef’s table experiences and curated tasting menus inspired by traditional Indian flavors with modern presentation techniques.
Pandey joined Gymkhana Las Vegas in 2025 as part of the restaurant’s pre-opening leadership team. The Michelin-starred concept is internationally known for elevating Indian cuisine through sophisticated presentation and contemporary culinary methods. In his current role, he oversees kitchen operations, menu execution, culinary standards, and staff training while supporting large-scale luxury dining experiences.
He also played a role in culinary operations during the 2025 Las Vegas Grand Prix, where Indian fusion cuisine was showcased in one of the city’s biggest international hospitality events.
Apart from his culinary career, Pandey is also the author of The Heat & The Hustle — A Chef’s Path from India to the USA, a memoir that documents his professional journey, personal struggles, and passion for bringing Indian culinary traditions to a global audience.
Recognized by several culinary and hospitality organizations, Pandey’s achievements include the India Star Master Chef Award 2025, Young Executive Chef of the Year at the Better Kitchen Awards Mumbai, Marriott International’s “Unsung Hero of the Year,” and recognition in Marquis Who’s Who in America for 2025–2026.
