Guwahati:Novotel Guwahati GS Road has launched a Rajasthani food festival at its in-house restaurant, The Square, offering guests a curated experience of the region's traditional cuisine.
The dinner festival, which began on March 20, will continue till March 28, showcasing Rajasthan's distinctive culinary heritage shaped by its desert landscape, royal traditions, and bold use of spices.
The buffet features a mix of vegetarian and non-vegetarian dishes, including popular items such as Dal Baati Churma, Laal Maas, Jungli Maas, Ker Sangri, and Gatta Curry. Other regional preparations like Panchmel Dal, Dal Dhokli, Bajra Khichdi, and Mangori ki Sabji are also part of the spread.
Traditional snacks such as Kadhi Kachori, Besan Chilla, Bikaneri Bhujia, and Gathiya have been included to offer a wider range of flavours.
To enhance the dining experience, the restaurant has been decorated with elements inspired by Rajasthani culture, including traditional serving ware like clay pots and brass utensils, along with themed décor and folk music.
The initiative is aimed at showcasing regional Indian cuisines through an immersive dining format.
Speaking about the festival, Vineet Kumar Mishra, General Manager, Novotel Guwahati, said, "India's culinary diversity is vast, and each region has a unique story to tell through its food. With the Rajasthani Food Festival, we wanted to present a cuisine that is both rich in tradition and distinct in flavour. Festivals like these allow us to introduce guests to regional specialties in an authentic setting while continuing our focus on curated dining experiences."
The dinner buffet is available daily from 7 pm to 11 pm, priced at Rs 1,699 plus taxes per person. The festival is expected to draw both hotel guests and local diners interested in regional cuisine. For reservations, guests can contact +91 75780 00511.
